Ingredients:
Base:
2 packets digestive biscuits, blitzed
300g melted butter
Slowly add the butter to the biscuits
Line a baking tray with cling film
Flatten the biscuits in the tray
Filling:
1800g soft cream cheese
180g sugar
600ml double cream, semi whipped
250ml apricot puree
250ml mango puree
5g agar
Method:
Whisk the cheese and sugar
Heat the purees with the agar
Simmer for 5-minutes then leave to cool
Add to the cheese mix and fold in the whipped cream
Spread evenly on the biscuit base
